What the equipment is up against here
These are the oldest kitchens on the route and the most remodelled. A pre-war house that has been opened up twice usually has a professional range in a masonry alcove and a built-in column where a pantry used to be, and the two of them share a cabinet plenum that nobody planned. Foothill dust and ash off the slope settle in condenser fins and burner ports faster here than on the flat.
